Default fields - remove/ edit

There are fields that are in tickets by default and not mandatory like Category. Need ability to remove them.
Also, the existing priority field should have customizable options (ability to add Critical to the list).

I assume that you mean to disable fields like category, to prevent users from accessing/viewing them in issues?

Currently, Backlog has the option to disable priorities, versions and milestones in the project settings, but not categories. And, unfortunately, the existing priority field is not customizable.
